Honey
As we all know honey is the nectar collected from plants and that each different plant produces a different type of nectar - then honey has the possibilities to have many different tastes. When the bees collect from a large specific crop the beekeeper is given the possibility to harvest a single source crop. The main types of honey that the Millfield bees collect are usually from Oil Seed Rape, Field Bean, Lime and Heather. The other crops are usually from a variable source when the hedgerows, woods and verges produce an abundance of mixed flowers in both Spring and Summer.
It is therefore true to say that apart from those few specific crops, most of the honey I offer for sale is not the same every time, a bit like a vintage honey. Often something really special is collected.
To harvest the honey a very simple but time consuming process takes place by which the frames of liquid gold are removed from the hive, the protective wax capping removed and the honey released by spinning in an extractor. The liquid honey is filtered and bottled. Additionally some customers have asked for honey on the comb, this is also available but stocks are limited.
Honey although an amazing product in its own right, it can be enhanced by introducing a variety of flavours. This year has seen the experiment with a number of flavours - Chilli, Orange, Lemon, Lime and Ginger. The results have been amazing with Chilli being the most popular. We intend to develop the choices further with a number of different Chillies coming to the party, in the Spring we hope to add another 5 different Chilli Honey to allow a wider range of Chilli Fire.
